New York City-based fast-casual concept Just Salad will open its first South Florida location Thursday at 221 North Hiatus Road in Pembroke Pines.

Just Salad specializes in salads, wraps, bowls and avocado toast, and the location at the Pembroke Lakes Square shopping center will be 2,200 square feet and able to seat 42 people indoors.

After its first area store opens, the chain has four other locations planned for Miami-Dade, Broward and Palm Beach counties, all set to open by the end of the year.

Nick Kenner, CEO and founder of Just Salad, told the Business Journal that the chain has been looking for South Florida locations since 2017. He has plans to rapidly expand across the state with the goal of at least 100 locations in Florida in the next five years.

“There seems to be a real desire down here for healthy and organic and local options under $10,” he said. “It feels right to be down here, and it’s a real exciting time to be with the company.”

Kenner pointed to the fact that there are over 150 Panera Bread restaurants in the state as evidence that there is a market for Just Salad. He said Panera Bread is an equal competitor in the company’s eyes, and it will look to match the St. Louis-based chain.

“I think we can have well over 150 locations in Florida, but it all starts with these five,” he said.
